Our traditional Japanese Strawberry Shortcake (ショートケーキ) consists of two generous layers of fresh strawberries, carefully selected throughout the year for peak flavour, and three layers of soft Japanese genoise sponge. We use a light mascarpone chantilly cream that is fluffy, natural, and just sweet enough for the perfect balance between fruitiness and milkiness.
The cake is topped with strawberry halves, gold leaf and micro mint for a touch of timeless Japanese elegance.
