To showcase the exquisite flavour of Uji Matcha without overpowering its delicate nuances and creating an overbitter taste, our Matcha Basque Cheesecake follows a different recipe with different baking time, temperatures, and cheese-to-cream ratio. This exclusive approach was inspired by our visit to Nakamura Tokichi Honten in Uji, Japan during 2018, where we discovered the optimal temperatures for baking matcha and the perfect cream-to-matcha ratio.
Setting it apart from many others, who simply add matcha powder to a standard recipe for matcha flavour, our Matcha Basque Cheesecake stands in a league of its own. It's neither a weirdly savoury cake (due to our adjustments) nor merely an ordinary and dry matcha-flavoured cake. Instead, it boasts an irresistible fragrance and creaminess that fully capture the unique taste of Uji Matcha, leaving a lingering sensation with each delectable bite.

Every cake comes with a small pot of homemade four-berry compote and crunchy Biscoff crumbs, optional to serve with. This cake is also gluten-free.

Keep in ziplock bag, airtight container or a tray wrapped with layers of cling film - Freezer (1 month):
Wrap the cake in layers of cling film, put inside a ziplock bag then keep in an airtight container; thaw for 48 hours in fridge before served. Please note that moisture may appear when the cake is thawing and may slightly affect the cake's texture so we recommend finishing the cake within 3 days of time if possible.

Cake comes with a cake board, a cake box and a paper bag. Berry compote and Biscoff crumbs are stored in plastic pots with lids.
